Moroccan Beef Salad with Couscous
Ingredients
1 cup (250ml) water
1 1/2 (300g) couscous
500g steak (1 rump)
1/2 cup (80g) dried currants
1/2 cup (80g) sultanas
1 medium red onion, thinly sliced
1 cup (80g) bean sprouts
1 medium carrot, thinly sliced
1 medium cucumber, thinly sliced & seeded
1/3 cup fresh mint leaves, finely chopped
2 tablespoons fresh dill, finely chopped
2 tablespoon pine nuts
2 teaspoon cumin seeds
3/4 cup (180ml) french dressing
Preperation
1. Bring water to boil in a medium pan; remove from heat. Add couscous, cover and leave to stand for around 5 minutes or until all of the liquid is absorbed.
2. Meanwhile, cook steak until browned on both sides and cooked as desired; thinly slice beef.
3. When couscous is ready, fluff with a fork. Add currants, sultanas, onion, carrot, cucumber and herds and mix gently.
4. Place pine nuts and cumin seeds into a small dry pan over a low heat and stir until seeds are just fragrant and pine nuts are toasted. Combine seeds, nuts and dressing in a small bowl.
5. To serve; place beef over couscous and drizzle with dressing mixture.
This dish can be served as an entree, a summer main course or as a light side salad to accompany a meal.
